Butter Wheat cookies - 3 mins cookie - kids snack

Hi there...

Normally Butter cookies are made with all purpose flour...

But I want to give it a healthy twist.. and it is superfast to make ...

No need of a hand blender or a beater just a spatula will do the job..

* Prep time : 3 mins
* Baking time : 15 mins
* Serve : 15 mini cookies

Ingredients :

. Wheat flour : 150 Grm
. Butter : 100 grm
. Sugar : 50 grm
. Baking powder : 1/2 tspn
. Baking soda : 1/4 tspn

Procedure :

Step 1
. Pre heat the oven @ 180 °c for 10 mins


Step 2
. Take a bowl add butter, sugar.. mix it together for a min

Step 3
. Add wheat flour, baking powder, baking soda... Mix well
Knead it together for 2 mins by hand..

Step 4
. Make small balls.. arrange it in a baking try ...
( Line the baking tray with butter paper)
Im using a non stick baking tray... so Im baking without a butter paper..


Step 5
. Grease a fork with butter... And press it over the ball and press a little and make an impression...

Step 6
. Now the cookies are ready to go into the oven.. bake it for about 15 min @ 180°c

Step 7
. Suggery, crunchy rustic wheat butter cookies are ready to take a bite...


So simple as that...

Rice cutlet - 5 mins cutlet - kids snack

Hi there...

If you really want a quick snack...
Here is a superfast snack... In just 5 minutes with leftover rice...

* Course : snack
* Prep time : 2 mins
* Frying time : 2-3 mins

Serve : 5-6 cutlets

Ingredients :
. Leftover rice : 1 cup
. Onion : 1
. Salt : as required
. Cumin : 3/4 tspn
. Fennel seeds : 3/4 tspn
. Chilli powder : 1 tspn
. Grama masala : 1/2 tspn
. Turmeric : 1/2 tspn
. Besan flour : 2 tblspn
. Coriander leaves : few
. Curry leaves : few
. Water : few tablespoon
. Oil - 3 table spoon



Method :
Step 1
. Take a bowl add cooked rice, cumin, fennel seeds, chilli powder, garam masala, turmeric, besan flour, curry leaves, coriander leaves, salt and mix it well... Sprinkle some water to mash the rice...

Step 2
. Make it into a dough...

Step 3
. Heat a frying pan, add oil... Make  small cutlet shapes... Shallow fry it in the oil.. ( it can also deep fried )


Thats it... Super fast rice cutlet is ready..

Crispy Onion rings - evening snacks

Hi there...

In this winter season, we like to have something hot, and spicy...

Here is a very quick evening snack, simple ingredients... With very less oil...

Ingredients :
. White onions - 2
. Rice flour - 1cup
. Corn flour - 1/2 cup
. Bread crumbs - 1 cup
. Salt - as required
. Chilly powder -  1 tblspn
. Oil - 1/2 tblspn

Serve : 2 bowl

Method :
Step 1
. Pre heat the oven @200°c for 10mins

. In a bowl add bread crumbs, salt and 1/2 tblspn of chilli powder.. mix well ... Keep it a side..

Step 2
. In another bowl.. add rice flour, corn flour, salt chilli powder...mix well
. Add water little by little to this and make a thick paste... Keep it aside


Step 3
. Slice the onions into 1/2 inch thick circle slice

Step 4
. Split all the circles separately... Dip in the flour mixture.. and dust it into the bread crumbs mixture.. arrange it in a tray..
( I am using a no stick tray oven tray..)
( You can line the tray with butter papper.. )
Step 5
. Once all the circles are ready... Put it the pre heated oven @200°c  for 20 mins..

Instead of put it in the oven you can also deep fry it in the oil... For extra crisp...

Crispy Onion rings is ready...

Cheese stuffed pepper - cheese mirchi - kids snack

Hi there...

Mirchi Baji is a authentic south indian recipe... 
It is very quick & easy to make...

Here I had made it with a twist...
Peppers/ mirch is spicy on its own... Kids normaly  would hesitate to try... 

Try is cheese stuffed mirchi... Kids can also take the recipe with the special twist of take along with a dip.. 

Ingredients :
. Peppers : 3-5
. Gram flour - 2 tblspn
. Chilli powder - 1/2 tblspn
. Salt - as required
. Asfortida - 1/2tspn
. Turmeric - 1/2tspn
. Water - 1/2cup
. Oil - to deep fry

Serve - 5 baji / peppers

Method :
Step 1
. Take a bowl, add gram flour, salt, chilli powder, turmeric, asfortida and water little by little make a semi liquid cosistancy..


Step 2
. Slit the peppers... Deseed it completely.. 
Make sure there is no seed in it.. 

Step 3
. Stuff the pepper with any favourite choice of cheese.. I have used cheese slices.. 
 ( Since there is gap, i have filled it with another cheese slice..)

Step 4
. When it is completely stuffed with cheese... Dip it in the garam flour mix we had made earlier...
Step 5
. Heat oil in a pan for Deep fry, put the mirchi in the oil, turn to low flame... 

Step 6
. Turn the side... So it cooks through all the sides.. 

Step 7
. Crispy, cheesy evening snack is ready...

Palak baji - Evening snack

Hi there...

Palak baji is an evening snack.
We used to buy green leaves/ keerai once a week..

During  winters & rainy season I dont like having green leaves.. But this receipe suprised me...

The crunchy texture....tastes yum.. In this chill climate.. Try some hot, crispy palak baji with some chutney dip & hot tea. Yummmm....!!!

Ingredients :
. Palak leaves - 15 - 20 leaves
. Gram flour - 3 tblspn
. Rice flour - 1 1/2 tblspn
. Salt - as required
. Chilli powder - 1/2 tspn
. Asfoetida - 3/4 tspn
. Oil - to fry

Method:
. Step 1
Wash palak leaves & keep it aside

Step 2
. In a mixing bowl, add gram flour, rice flour, salt, chilli powder, & asfoetida.

Step 3
. Add water into bowl and make a liquidy paste.

Step 4
. Dip the leaves into the paste.

Step 5
Heat oil in a pan... Fry the leaves tor 1 min and transfer it to a tissue papper.. To absorb excess oil
Step 6
. Crispy, tasty snack is ready to taste...

Spicy Carrot fingers

Hi there..

Carrots is a very tasty vegetable.. 
Most of us like to eat it raw, or some likes in a poriyal, fry, or even in sambar & curry..

Have you tried it as a fringer fries, that too less oil..

Spicy carrot fingers are mix of sweet, spicy, & tangy flavour.. Tastes yumm.. 

Ingredients:
. Carrots - 4
. Salt - 1/2 tspn
. Chilly powder - 1 tsp
. Oil - 1 tblspn
. Lime juice - 1/2 tspn

Method:

Step 1
. Wash the carrots, peel the outer skin..

Step 2
. Chop the carrots into fingers shape

Step 3
. Take a mixing bowl add all the carrots, add salt, chilly powder, lime juice & oil.. Mix it well

. Step 4
Allign all the carrots in a baking try.. 


. Step 5
Set the oven @ 200°c for 5 mins.. Place the try into it and start roasting it. 

. Step 6
After 5 mins.. Take the tray out, and turn the carrots to other side..

. Step 7
Again the tray goes into the oven for about 3 mins @ 200°c

. Step 8
Spicy carrots are ready to serve.. 
Taste good with a garlic mayonnaise dip or plain mayonnaise..
