Sponge dosa - Aval dosa

Hi there...

Sponge dosa or aval dosa is a super soft & fluffy dosa...

Taste delicious with a vegetable stew, sweet coconut milk or coconut sambal...

It a bit time taking... But it can be stored for 2-3 in the refrigerator...

* Course : breakfast or dinner
* Soaking time : 3 hrs
* Fermentation time : overnight or 8 hrs
* Cooking time : 2 mins


Serve :10- 15 dosa

Ingredients :

Batter :
. Raw rice : 2 cups
. Urud Dhall : 3/4 cup
. Poha / aval / flat rice : 1 cup
. Fenugreek : 3/4 tspn
. Salt : 2 tablspn
. Water : as required to grind into smooth paste..


To make dosa :
. Oil : 1 tspn for each dosa
. Batter : 1 ladle


Procedure :

Step 1
. Wash rice , urud Dhall and Fenugreek, & soak it for 2-3 hrs

Step 2
. Wash aval / poha and soak it for 1 hr


Step 3
. Trasfer the soaked rice into  a mixer jar add enough water and grind it into a smooth paste...
. Grind urud Dhall and poha with water  separately and mix all three paste into 1 bowl...

Step 4
. Add salt and mix well & cover and let it fermentate for 8 hrs or leave it over night...

 Step 5
. After fermentation, take small portion into a another bowl and 3/4 cup of water mix well

Step 6
. Heat a dosa tawa. Pour 1 ladle of dosa batter & drizzle some oil around it... Cover and cook for 1-2 mins...

Step 7
. Cook only one side.. sponge dosa is ready to taste...
