Dhokla - Gujarati breakfast - without Eno salt

Dhokla is an Gujarati breakfast..
This cannot be avoided in a Gujarati thali. Made with gram flour,  fermentated with yogurt and steam cooked...


Very spongy, sweet as well as spicy steamed dhokla..

* Course : breakfast
* Prep time : 2 mins
* Fermentation time : 10 min
* Cooking time : 30 min
* Serve hot
* Side dish : yogurt , pickle or chutney

Ingredients :

. 1 cup gram flour
. 1/2 tspn sugar
. 1/2 tspn salt
. 3/4 tspn Turmeric
. 1/2 cup yogurt
. 3/4 tspn Baking soda
. Water as required

For tempering :
. 1 tblspn oil
. 1 tspn Mustard
. 2 tspn sugar
. 1/2 tspn salt
. Curry leaves few
. 1/2 cup water

Method :


Step 1
. In a bowl add gram flour, sugar, salt. Turmeric, yogurt, add enough water.. mix into a thick batter



Step 2
. Add baking soda mix well, cover & rest for 10 mins


Step 3
. After 10 mins.. Grease a cake pan with oil.. pour the batter..
Step 4
. Boil water in a steamer.. place the batter tray.. steam cook it for 25-30 mins

Step 5
. Heat a frying pan, add oil, Mustard...curry leaves, Sugar, salt and water.. allow it to boil for a min

Step 6
. Pour the tempura over the steamed dhokla.. after a min, cut into pieces...

Step 7
. Spongy Dhokla is ready to serve ..
