Eggplant curry - kathrika gravy - south indian curry

Hi there..



Egg plant curry/ kathrika gravy is a thick, creamy gravy with soft egg plant with rich Coconut milk, tastes fantastic.

Steamed white rice.. or with roti..
This curry tastes extremely delicious...

Cooking lard pieces of egg plant or brinjal... Sauteing it in the sesame oil.. dry roasting all indian spices with grated coconut & masalas

 Grinding the roasted spices with coconut into a thick cream

Thickening the creamy mixture with sauted brinjals. Untill completely cooked..

Eggplant will just melt in the mouth...

Ingredients :

. Egg plant/ brinjal : 3-4
. Grated coconut : 3/4 cup
. Red chillies : 3-4
. Coriander seeds : 1 tspn
. Fenugreek : 3/4 tspn
. Cumin seeds : 1/2 tspn
. Onion: 1 +1 or shallots 4-5
. Tomato : 1
. Turmeric : 3/4 tsp
. Salt
. Sesame oil : 2 tblspn
. Curry leaves : few
. Coriander leaves : to garnish

Method :

Step 1
. In a pan, dry roast red chillies, coriander seeds, Fenugreek , coconut  & cumin for a min

Step 2
. Add 1 onion or 3-4 shallots and tomato along  with the spices.. saute for a min

Step 3
. Transfer all into a mixer jar.. add little water.. & grind it into smooth paste..



Step 4
. In the same pan, add sesame oil, Mustard, curry leaves & chopped brinjals or egg plant.. statute for 2-3 mins..


Step 5
. Add the grinded paste into it..


Step 6
. Add salt, turmeric and required water.. cover and cook for 5 mins..

Step 7
.  Wait for the gravy to thicken,...

Step 8
. Spicy, creamy Egg plant gravy is ready to taste..



Delicious brinjal gravy/ egg plant curry is ready...
