When i was a kid, my mom used to make it often... This is my all time favourite recipe...
Just in one pot...
Ingredients:
. Rice : 1 cup
. Onion : thin sliced : 1cup
. Tomato : thin sliced : 1 cup
. Ginger garlic paste: 2 tblspn
. Grated coconut : 2 tblspn
. Curd : 2 tblspn
. Green chilli : 2
. Cinnamon : 1 inch
. Clove : 3
. Cardamon : 2
. Bay leaf : 1
. Mint : 3/4 cup
. Fennel seeds : 1 tspn
. Salt - as required
. Ghee - 2-3 tblspn
Serve : for 2 person
Method :
Step 1
. Soak rice in water untill done with sauteing
Step 2
. Heat a pressure cooker.. add ghee, add all the species, cinnamon, clove, fennel seeds, cardamon, bay leaf saute for a min
Step 3
. Add grated coconut, green chillies, & mint.. untill it turns lite brown..
Step 4
. Add curd mix well... Add onions, wait until it starts to brown... Add ginger garlic paste.. saute for 2-3 mins, add in tomato into it
Step 5
. Add required salt cover & cook with out the whistles for 3 min... Make sure the tomatoes are well cooked..
Step 6
. Add 2 cups of water let it boil.
. Wash the soaked rice, drain and add the rice in the cooker...
Step 7
. Mix well, cover & cook.. & allow 3 whistles...
Step 8
. When the steam calm down, open the cooker, give it a gentle mix...
Yummy khusha is ready..
