Stuffed Brinjal/ eggplant - south Indian side dish

Hi there...


Stuffed Brinjal is an authentic south Indian recipe...

It is one of the best side dish for and any south indian rice like Dhall rice, curd rice, sambar satham. Etc,..

This stuffed Brinjal is added into a tamarind curry, which is Yanakathrikai...
that is yone of my favourite curry.. i will try to post that recipe soon...

Well here it is just stuffing and frying.. 

Ingredients :
. Brinjal / Egg plant - 4-5
. Peanuts - 3tblsn
. Cashew - 1/2tblspn
. Bengal gram - 3 tblspn
. Urud Dhall - 2 tblspn
. Red chillies - 2
. Cumin - 1/2tspn
. Grated coconut - 2 tbspn
. Salt - to taste
. Oil - to shallow fry

Method :
Step 1
. Heat a frying pan...add 1tblsn of oil, add peanut, cashew Bengal gram,urud Dhall. Red chillies cumin & coconut.. saute till it turn lite brown.

. Step 2
.  Add all the content into a mixer jar.. grind it into a smooth powder..


Step 3
. Slit the Brinjal at the bottom.. stuff the powder into it..

Step 4
. Heat a pan.. add 1cup of oil, once it is hot.. put the stuffed brinjals into it.. let it cook through all the side... 
Cook untill it turn lite brown colour...

Nutty, tasty brinjals is ready ...
